Quick Chicken Stew

Ingredients:  Serves 2

2 Chicken breast
1 tablespoon olive oil
1 onion chopped
1 clove of garlic sliced
1 tablespoon tomato puree
2 dessertspoons dried mixed herbs
200g chopped tomatoes
200g black eyed peas
Zest of lemon
Flat leaf parsley
A handful of black olives chopped
1 small head of broccoli 
1 red pepper


Method

1. Heat a deep, wide non stick saucepan and add the chicken.
2. Cook the chicken for 5 minutes until browned all over. Remove and set aside.
3. Add the onion and garlic to the pan and cook for 5 minutes until starting to soften, add the herbs and tomato puree and cook for about ½ minute. Stir in the chopped tomatoes and the beans and the vegetables.
4. Return the chicken to the pan and cook for about 10 minutes.
5. Add the olives and lemon zest and parsley.
6. Cook for a further 10 minutes and serve immediately
